Singapore Hokkien Noodle

When I first tasted “Singapore Noodles” in Canada (the version stir-fried in massive amounts of curry powder). I said to myself.. there’s no such thing in Singapore! Just like there’s no “chicken balls” in the Chinese diet. If any noodle dish can be called Singapore Noodles.. it’d be either Char Kway Teow.. or this video’s Hokkien Mee. The perfect blend of short-braising and stir-fry. There’s no curry powder involved! And the noodle is meant to be a little bit “wet” served with a minimal coating of sauce! Yummy!
